Simple Vegan Coconut Garlic Lime Sauce

This rich, creamy coconut sauce is brightened by lime and grounded by garlic and coriander. It is perfect drizzled over roasted veggies, grains, or your favorite protein. Quick to make. Endlessly versatile. Recipe by Clark Ciolacu

Ingredients:

  • 1 can coconut cream

  • 5 large cloves garlic, finely diced

  • 1 tsp flour (any kind, for thickening)

  • 1 tsp ground coriander

  • Juice of 1 lime

  • Cilantro, for garnish

Instructions:

  1. In a saucepan over medium heat, sauté the diced garlic in a little oil until fragrant and lightly golden.

  2. Stir in the coconut cream, flour, and coriander.

  3. Bring the sauce to a low boil, then reduce heat and simmer for 10 minutes, stirring occasionally until it thickens.

  4. Turn off heat and stir in the fresh lime juice.

  5. Garnish with chopped cilantro and serve warm.

This recipe is especially nourishing to vata and pitta, and will increase kapha in excess.
